  Gnocchi of smoked Sicilian ricotta, double-textured tomato (cooked and raw), basil sauce and tarragon

• Tenerumi in tempura

  Crispy Tenerumi (zucchini leaves) with turmeric, red pepper sauce and Sicilian caciocavallo cheese fondue

• Filetto di maiale alla stimpirata

  Slow-cooked fillet pork on carrots, celery, white onion and green olives sweet and sour, garlic sauce and basil sauce
